Best Salsa in the West, I PROMISE!

This is what the Black Eye Pea Salsa looks like when you spill a full bag of it on the floor,(caution it has oil in it and it is VERY slippery, so was my floor for several days) another exciting addition to the Halloween fiasco..Luckily I made a ton, and still had plenty. You will LOVE this salsa, it just gets better the longer it sits..If you have a Winco in your area(that's just were I got them) try the Juanita's Brand Tortilla Chips they are so authentic and really good..

Best Salsa in the west!


1 can black eye peas, drained

1 can shoe peg corn, drained (its with the can vegetables, its very small corn)

1 medium jar chopped pimentos, drained

1 large red bell pepper, chopped

1 medium onion, chopped

1 avocado chopped


Marinade

1 cup sugar

1 cup vinegar

1 cup vegetable oil

1 T. Tiger sauce (this is a sweet Tabasco sauce and can be found in the same section)

salt and pepper to taste


Mix together all the ingredients, except the avocado. Refrigerate for at least one hour. When ready to serve, drain the marinade and add the avocado. Serve with chips..So Yummy and pretty..

We now have a Winco in Salt Lake. Have not been there yet, but so remember when you took us to your's in Ca. Makes me happy to have it. will make your salsa on return. By the way - you are a wonder.

Okay, so I found Mike's recipe for his Chili. We lost it and this year he had to improvise and it didnt work. I am anxious to try this salsa. I will post a great one you might want to try called "Mexican Caviar"(maybe you've heard of it) tomorrow. I've never met anyone who didnt love it! I get requests all the time for the recipe...you eat it with Frito's Scoops! Enjoy!

oh no! salsa on the floor! for some reason that picture made me laugh... sorry! I'm glad you had made lots so the spill wasn't the end of the world, but it just looked funny to me seeing all that yummy goodness on Miss. Maureen's kitchen floor. I will print off this recipe for sure..... this pregnancy I have loved bananas and things with lots of flavor: Salsa!!
